Southern Tomato Pie on a hot summer day

So, over the weekend I decided to make a tomato pie. I had a slice a long time ago and loved it and I had some tomatoes that didn't have much longer of a shelf life, so I figured I would try it? I'm going to tell you how to make it and I'm also going to include a link below and at the bottom to a great amazon find that I recently discovered. I figured I could show you what I stored my leftover tomato pie in. (smile emoji)

But first, my tomato pie recipe.



you want to start by pre heating your oven to 350 degrees and while you are pre heating you can start with the crust:


1 1/2 cup of whatever flour you like to use (gluten or unglutened)

4 tablespoons of butter (salted or unsalted)

5 tablespoons of olive oil ( I substituted for shortening because I didn't have any, but it comes out just as crispy and flaky )

3 tablespoons of ice water ( not all at once, slowly add tablespoon by tablespoon)


- Get a large mixing bowl and add ingredients. Slowly mix together with a fork and slowly add ice water until it is in little pea sized balls. then, form the dough into a ball and wrap with plastic wrap or reusable wrap and stick in fridge for 30 mins.

-Once its's ready, flatten it out to shape into pie dish and cook for about 10-12 mins until it looks like it haas started to get flaky and a little browned.

-Now for the tomato mixture. I use half a carton/whole (depending on how much you like tomatoes) of cherry tomatoes because they are a little sweeter. I cut them in half and put them into a bowl.

- In another bowl add:

1/2 cup sour cream

3 tablespoons of plain greek yogurt

salt and pepper to taste

1 cup mozzarella shredded

1 cup cheddar shredded

- Mix all of the sour cream and cheese mixture together and then get the crust and layer the tomatoes on the bottom layer, then spoon in cheese mixture on top and spread it evenly. If you like basil, you can add a few leaves in the middle.

- Cook for 30 minutes, take out of oven and let cool for 10 mins and you are ready to eat!
